
I was just checking the pictures on my camera, and came across this one that I took last week. These are Elderflowers — we have a small bush growing in our garden. The are a really delicate little flower, and grow in clusters on the bush. There should be some berries on there soon.
In days of “Yore”, when I made wine, Elderberry was one that I made more than any other. It is a very pleasant red wine. But I also used to make Elderflower wine; which was usually a sweet sparkling white wine that was very refreshing. Our little bush wouldn’t have given us anywhere near enough ingredients, but at least I would have known when to go out foraging — had we had it then.

Very beautiful! I wondered what the flowers looked like when they were not dried (to make tea), and now I know.
Elderberries are a hot commodity. There was some research in Israel that indicated that they had anti-flu properties. With the swine flu scare, we (at the health food store) can’t keep them in stock.
